We have Whitetails down here. Long story, short; my boss has a 3000 acre high finced ranch in South Texas. He has special permits to shoot X amount of deer per year and has an extended hunting season. Basicly we (employes and customers) shoot roughly 10-15 deer a weekend. I'm fortunant enough to go down there many times to help hunt and be a guide. I shot 6 deer this season, last season I shot 9, and the one before that I shot 13ish. I don't keep them all. I usually get a couple early in the season to make sausage, then the others I shoot go to the office and others go to customers that didn't shoot anything. This last weekend was our 'clean-up' weekend where we shoot out the amout of permits he has left. Our target number was 15, but we only got 12. O'well, the rest will live till next season in October. He has some of the largest deer in S. Texas, I'll post some pictures when I get home and use my compter there.

Tamallies are a Mexican dish that have meat rolled up with a Mexican 'masa' wrapped in corn husk and steamed in a huge pot. Usually you make several dozen at a time because of all the work involved, eat a 1/2 dozen with some salsa and freeze the rest till later.

Deer rolls?? Ask Skipp, Aaron or Tracy about those I take thin slices of backstrap, marinate them in my special sauce, then wrap them with a jalapeno and bacon. Char them on the gill and eat.

Ive had some very good Wild foods , Stuff mom made ,,, Jenny has got me to the point to where i quit hunting for food , She cooked up some squarels when we were dating and they were nasty , then shes tried deer a few times , I usually get up from the table and grab the phone and speed dail dominos ,

My Neighbor and his wife are great at cooking wild food , Ive had Ground Hog at his house and it was awesome !! He will never tell you what your eating till its gone ,

Jenny has tried a few different ways all sucked , I gave up on it , Ill go to the meet market and get beef ,

A guy at work thinks he can make wild game its horrid , Very funny is he always talks about mixxing in 1lb of beef with 1 lb of elk and stuff like that , To me the elk is just filler and he ruined the beef , Its like $150 to have a deer processed $50 for a tag for $200 i can have a bunch of NY Strips

ok first of all ,,,are you starving.. why are you eating squirrels in the first place, ground hogs... come on,, save those for the eagles..

It is pretty pricey to buy steak too, we paid 1100 for side of beef....regardless, deer was about 120.00 to cut and wrap. the ticket was a draw, so no cost there either..
we coulda done it ourselves if we had the right place to hang it and cut it up.. did it before was just as good and dam easy,,plus got way more pieces for jerky, and every dog in the neighbour hood got a bone..

that cost hardly nothing but paper and tape and time.

I think if your going to mix any thing with deer or wild game would be pork to the burger, cause its so lean anyhow...

So your the cook in the house then?
