Hey logan i made a hog like that took 12 hours to cook it , and the bottom inches was burnt just to get the top done

i dont cook it whole.....takes too long and too much B.S......skin and gut it completely then break out your chain saw and use canola oil instead of bar oil and split it down each side as close to the back bone as possible then cut your front and rear quarters off and clean, wrap and freeze them or rap in foil and cook on the grille along with the ribs, start from the bottom and work up......its been a while so im probably a little slow now but me, my stepdad and my brother could shoot one and have it ready to cook in a little over an hour.......took about 200-250 pounds of charcoal in our cooker......

yeah we used to throw some hickory logs in the bottom of the charcoal so it would smoke but not flame.....

yea....gas is a no no....get that outta hear ya bottle babies. I'll have to take pictures the next time we do...I guess being from the south ya just take it for advantage everybody knows how to cook ribs...

Just be glad you guys have access to hardwood. We cant get it out west.

I think that was the first time Ive made ribs - they were fantastic...

I used my Fluke meter and thermocouple to keep track of the BBQ temperature...
