And I thought I was cutting corners using my weber instead of a smoker...who grilles on gas??
On my weber I like to put either ribs or chicken in some foil pans covered in BBQ sauce and whiskey, simmer that for a bit. Then pull them out of the pans and directly on the grill for a bit with wood chips on the charcoal, low, smoky heat.
