Default wheel question for f250 superduty

i have a 99 superduty F250. I have 315/75/16 BFG All Terrain tires waiting to go on it, and a leveling kit on the way. Well my wife wants my wheels painted and i just cant do that to my factory polished 8 holes. my question is what size rim do i need? 16x? also what offset to have them stick out a hair instead of being stuffed inside the fenderwell? meaning like the tires might stick out say an inch from the fenderwell. any help is greatly appreciated... Gregg
