The times I've been doing weapon retention drills I've been so busy with both hands I've not even been able to grab a knife. When somebody grabs or tries to grab your gun it's a furball of epic proportions...those who say they will grab a knife and slice you...have never trained..but watched lots of TV and movies...
Plus, it's not easy to cut somebody, it's actually extremly nasty, can be bloody like you have never seen blood before..warm...sticky...smelly...it's harder to have the cutting mindset than the shooting...
Now personally if I was going to carry a knife to cut somebody I'd want a knife designed to cut a human, with a blade designed to cut human flesh, muscle, bone...some have the general shape, but if the blade is not designed to cut a human it will not do nearly as much damage...and a human can bleed tons before dying or getting weak enough to stop trying to kill you...
I prefer the spyderco civilian, it's designed for only one task...to slice a human...

When I do open carry it is in a holster that has 2 separate retention devices. I can pull it very quickly as I am familiar with it and I have practiced with it. Somebody else would take alot longer to be able to figure out how to draw the weapon from the holster.
And if you ever have to pull and shoot, you better keep shooting until they are down for the count.
