Default running hot now

ok so after along time waiting finaly got my new pump and injectors in and the old truck runs great, however it seems to be running alot hotter than it used to. I understand more fuel meens more heat but this seems to be more than that. pulling a loaded trailer the other day the water temp climbed well above 230 I stoped several times to let it cool down, the same road empty it ran closer to 190 wich is still hotter than it used to be. I just dont know know what normal should be and Ilove my old truck and dont want to burn it up any help would be great
