Use an anti-freeze tester, and it can tell you what the protection level is.

I think the lowest you can do is a 180. Did you by chance clean and straighten all the fins??

it sounds to me like you might have an air pocket trapped in yer coolant system. try this.

get some ramps, or a jack and some jackstands. either drive on the ramps (if they are rated for the weight) or jack the truck up and put the jackstands under it making sure that the radiator fill neck is higher than any part of the motor. this will help the air bubbles rise to the top, ie the filler neck. it will also help if you have someone with a vacuum deal that can pull a vacuum on the coolant system. this will speed the process of ridding the system of air. replace the thermostat and make sure it is inserted in the correct position.

hope this helps.

take the t-stat out and fill with 50/50 mix from t-stat port.Once it is full at that point, put t-stat back in. Fill rad until full at neck of Rad. start truck(with rad cap off and heater on Hot with defrost on) and keep filling until no more will fit. Fill overflow bottle (if you have one) between add and full. Put cap on and take for drive with heater on hot and on defrost. Get back and check overflow. let cool enough to take cap off and check rad level.
Drain that mix you have now and start with new 50/50 mix or 50/50 premix.
