...I decided to leave the half a jar that I had left on Friday night sit in the fridge until Sunday to let it "Come into its own". (I have found that if you let peppers/salsa sit in the cold they will have a touch more kick after a day or two....don’t know why or what it does to the capsaicin to bring it out ....but it seems to work!). That did the trick...i had a touch more bite and was very good....
I enjoy things the spicier the better... I am thinking buying a jar of the regular and the stupid hot, to try each-
Do you think you could use your aging/cooling process if you opened the jar, ate say a spoonful, and capped it and threw it back in? or do you simply need more air/salsa ratio in the jar for the process to work?
