Sorry bud...I got busy and forgot about this.

Th Bradley smokers that I have dont have much trouble maintaining temps. The digital version I have works much better because it has a digital temperature controller in it. Its able to maintain even temperature within 1 degree from top to bottom. Some smokers vary 20 degrees or more.

I havent done any dish but the Bradley has 2 elements - 1 supplys the heat inside the over and the other element is for generating the smoke. You can unplug the heating element and just generate smoke. In essence this would be cold smoking and you can buy special attachments that help with cold smoking. I can answer other questions if you have them.
