Just as a heads up... I think every cruise ship has a chapel and does weddings... At least the RC and Princess ones we've been on have had them... From our experience, around 30 - 50 couples get married on every cruise we've been on...
Also, be aware that Carnival has a reputation of being a "party cruise"... Meaning LOTS of college-age and young kids... (Even in October)
The cruise that Bobby and I went on last year hit all of those ports plus one more (I think one more...). Cozumel is FANTASTIC! The water is perfect for snorkeling or SCUBA diving. Some of the best we have ever seen! We stopped at Georgetown, Grand Cayman... It was ok but VERY crowded and busy. Ocho Rios was very beautiful, but we had a very bad experience with the locals... They were VERY agressive (the worst we have ever seen, actually) and it got a pretty scary. The main attractions are Dolphin Cove where you can swim with dolphins and Dunns River Falls where you climb a beautiful waterfall that starts at the beach. When you leave the waterfall, you are forced to walk through a flea market to leave, the locals there will do ANYTHING they can to get your money there. I was terrified...
OK, I know I have rambled on WAY too much... But, figured you'd want to know!
