We went on Royal Carribean, but we have been on a Princess cruise before too. Loved them both.
Depending on the room that you get, it can be as little as $1800 for two for a 7 day cruise. I know it sounds like a lot, but in included ALL of your food. (Which, by the way is outstanding! Think lobster and prime rib!) The only thing extra that you pay for is sodas and alcohol. (and some of the activities cost extra too... spa, casino, etc...)
I would recommend a room with a balcony. It may cost a little more, but it adds quite a bit of space and you have access to outside. We got an interior room on our first cruise and didn't like it at all. You have no concept of time... No window to let in sun. It can be 2 AM or 2 PM and you wouldn't know the difference.
One other thing, pick a trip that only has 3 or 4 stops... The days at sea are a lot of fun and give you time to rest... We hit 5 islands on this trip and only had 1 day at sea.
