Default having issues

08 6.7 the water temps showing hot truck says check guages and the power reduces however checked engine block itself and it seems fine. Not getting any water in the oil or anything and cooling system holds pressure, sound familiar to anyone, any help is appreciated.

check the rad first thing in the morning and see how much pressure is on it.

does it jump up to like 250 then go right back to normal? as soon as u let off or slow down
