Ok, the flair into 2nd is easy to fix. Adjust the front band. Torque it to 72 in lbs then back it off 1 3/4 turns. Tighten the jam nut. Torque that to 30 ft lbs. Done. 2nd should be good to go.
Now, on your issue with shifting at WOT, that would be a governor pressure sensor. They are common, and usually also for the light throttle shuttle shift where it can't decide what gear to go into.
As for the hunting for gears going from cruise to WOT, do you have any codes? Stock tires? Adjusted Speedo?
If you plan to do the least possible and try to make it last as long as possible I would upgrade the VB and start that rainy day fund. If you are going to kick out the cash to pull the transmission and do a converter I think you are short changing yourself by not going through the whole unit.

SYMPTOM/CONDITION:
The customer may experience a 1-2 shift transmission hunt during light throttle application.
This condition may be due to a governor pressure solenoid valve.
DIAGNOSIS:
If the customer experiences the above condition perform the Repair Procedure.

1. Raise the vehicle on a suitable lift. Turn the ignition switch to the “OFF” position.
Remove the ignition key from the ignition switch.
2. Remove the transmission fluid (oil) pan and pan gasket. Clean and save the pan
gasket for later use during reassembly.
3. Disengage the wire connector to the governor pressure solenoid valve (Fig. 1).
4. Remove the screws used to secure the governor pressure solenoid valve retainer to
the transmission valve body.
5. Remove the old governor pressure solenoid valve from the transmission valve body.
6. Clean the transmission housing and oil pan gasket surfaces.
7. Lubricate the o-rings on the new governor pressure solenoid valve.
8. Align the governor pressure solenoid valve to the bore in the valve body.
9. Install the governor pressure solenoid valve to the valve body.

This next part is copied from a good friend who is also a good trans tech!
They are not too bad. I would recommend the Transgo Kit, it is by far my favorite. Plus slap in a billet servo cover and band strut and you are good to go. This will net you good solid shifts, along with more TCC hold pressure. The Servo cover is a nice piece since it has an oring to seal around the front band servo to help keep the accumulator sealed for consistent shifting.
This will increase the durability of the clutch packs and bands a bunch. For more power, slide the trans back and get a converter slapped in there!
Replacing the gov solenoid is way easy, remove the pan, one electrical connector, two T25 screws, and 4 1/4" bolts. I generally do the transducer at the same time, if nothing else I call it maintenance.
It seems that if I only replace one or the other, inevitably the other fails not long after fixing the first.
I would really like to see someone try this fix out. I think the GM solenoid is a much better design for consistency and long life.
#REC. This kit was specifically designed to handle higher base pressure in high performance applications and to improve the reliability of the governor solenoid in normal use. In performance units the pressure can flood the Dodge solenoid and cause a no shift condition at full throttle. This is the fix.
As far as adjusting bands: If you have a later model trans (48RE after '03) this practice is no longer done. These bands are set when installed and if they require adjustment then they are worn out. Basically, you will cost yourself a lot of money if you adjust and use them past their usable life.
We just need to source these parts and we are all set (I haven't looked for a supplier . . .)

No codes that I know of. Tires are 285's and I doubt if the speedo has been adjusted.

Well Saturday 2nd gear started slipping. 
I got home, checked the fluid (clean, full and didn't smell burnt). Ended up adjusting the front band and now it's shifting like it should. It's still soft for my taste but it's a night and day difference.
Now I just don't know what to do now...

Oh! I now have less than 2 threads showing after the jam nut on the front band...

I got home, checked the fluid (clean, full and didn't smell burnt). Ended up adjusting the front band and now it's shifting like it should. It's still soft for my taste but it's a night and day difference.

Now I just don't know what to do now...

Front band, exit stage right. You are going to need to put a new one of those in soon. Start saving, next time it acts up you will need to open it up. Glad its shifting right for now!
