Default Manual shutoff lever adjustment
The linkage in this picture (not what's circled, but the linkage in the middle of the picture) is the manual shutoff valve, correct? If you took it off and didn't mark it, how do you know where it goes? There was an o-ring behind it.

That is the manual shut off correct as for your other questions I dont know
