If you are worried about it on a hot street truck personally I would pull your current thermostat and drill three 1/8" holes in it.
This is what I do to most of the T-stats .. just for safty and helps to burp system also

That's the same thing guys do to stop the massive temperature drop when the tstat opens isn't it because mine will get to 190 and drop off to about 150 to 160 and then stay steady at about 180

Mine will still go to 200* then drop to 130 .. first time .. then levels off after that .. typically stays in the 180-190* area when driving Freeway ( 1750 RPM'S ) ..
