Well, the easiest way is to jackstand your frame and remove your wheels, then just start to ease off the U-bolts a little at a time for each side, you may need to disconnect your shocks. If you bring all your U-bolts loose at the same time and the axle is still on the springs take a Dead-Blow and smack the axle to drop it as the pins are sticking. If you have enough U-Bolt, you can loosen them enough you can slide one of your blocks out or you may have to slide both out and separate them if they rusted together. Then just start tightening the U-bolts back up. Torque them down, and then check them every day for a weeks to make sure they are still torqued. If you don't have enough U-Bolt to drop the rear end enough then get a car jack under your 3rd member to let the axle down slowly (And then I would suggest only doing one side at a time, keep the other U-bolts loose but not off, they suck to lift back up to the springs by yourself, even with a friend it's not fun.
Other than that I would suggest as Karls03 said and get some 4" blocks or new springs to replace it with. With it sitting lower though you may get a real weird looking Squatting appearance if you have anything in the back of the truck.
I saw a '77 flatbed Ford once (Actually, the guy still has it, I know where it sits) that had 2-4" blocks stacked in the back to get an 8" lift because the springs had gone flat. But it was an old farm truck. Still funny though.
