I ended up doing just that an it turned out super! I would of never thought decal remover would do that...

On stainless, I'd think that the decal remover should take the highway paint off. Then hit it with some metal polish to clean up any residue.

Good luck.

The two best items for removing highway line paint are rubbing alcohol in the highest concentration you can find(I use 90% when I detail) and a product made by Stoner called "Tarminator".

If you use the rubbing alcohol use cotton to soften the paint and a soft terry towel or micro-fiber towel to remove the paint when its loose. If the line paint is not that bad and you use the Tarminator use the same care and towels so you do not scratch the clear coat.

Either way will work and have been used by many shops that detail.I just did a customers Benz that he had the yellow paint all over it and up on the body as well.
