O-ringing the block is definitely the way to go if you have the block out, or if you have a jig that can do it with the block in the truck.
Heads like to warp, crack, melt, disintegrate, et cetera, more than blocks do. Under competitive use a block may see several heads in its life span; having the rings cut in the block saves work on the heads.
