Default Exhaust gas temp

Hello everyone, I am new to Diesel bombers. I am looking forward to participating in this forum. I have a 2005 Dodge 3500 dully. I have had the edge with attitude on it for a long time, at least 8 to 10 years. I like it a lot. I pull a fifth wheel with it and the truck pulls it very good. My problem I think is that my egt is reading anywhere from 1000 to 1350 even without the fifth wheel. In the cool mornings it runs about 700 to 850. But lets say if the outside temp is from 80 to 95 outside it will go from 900 to 1200 then back down to 1000 then up to 1300. What could be the problem???
