Intermittent Smoke
My 2008 F350 smokes, A LOT, intermittently. There does not seem to be a repeatable pattern to when it happens. The smoke is mostly white to gray. If I shut off the engine and restart, the problem resolves itself.
I have been to the local diesel shop and the are stumped. Any ideas?

You said that there doesn't seem to be an repeatable pattern, but when this occurs, has the truck sat in high humidity or rainy conditions before you started it? If it has, you probably need a new CAC ( Charge Air Cooler, kinda like an intercooler I believe). It could also be an injector issue.
Never hurts to Make sure the oil level is correct and not overfilled, and check to make sure you aren't losing coolant.

Probably not, but it could. Overfilling oil isn't horrible, but personally I wouldn't make a habit out of it.
I would check the CAC like I said earlier. Also, check or have someone check your EGR system. It is possible that there is a crack in the EGR cooler that is allowing water to leak in.
