2005 6.0L low power on T/O & other issues
Sounds like you need an EGR delete and a turbo cleaning. You should be able to do both yourself if you can turn wrenches. It's nothing really complicated. I know how intimidating it can be when you first open the hood on one of these, but take all the turbo piping out and all the electrical crap on top and you've got a V8 under there somewhere.

Your year and low miles tells me this truck sits a lot or does a lot of short trip driving. Both of which are bad for the turbo. These things like to be worked. Clean that turbo up.
I go 5k miles on oil, regardless of oil type/brand. Fuel filters 10k max, I usually end up changing in the 7k to 8k mile range.

I changed my filters this morning and it seemed to help out the drivability a bit, but it still has some trouble taking off.
I attempted to take off the EGR valve but whoever put it in there must have way overtightened it or something. For what it's worth, it looks newer than the rest of the engine (I realize that doesn't mean it isn't dirty or anything).

well the deal with the valve is to get it out so you can see if you have coolant in your egr system. if its wet looking in there your unison ring and vanes could be sticking in the turbo due to coolant and soot build up causing your acceleration concern.
It's not overtightened, it's stuck in there with gummed up crud. That's how much crap builds up on them. You will have to pry it out somehow with a big pry bar of some sort. This is quite common actually. If it's stuck that bad, it is certainly causing drive issues.
