Thermostat?
I have a powerstroke and my wrench light came on but when I shut it off and start it right back up its not on, so I hooked up a snap on scanner, or (scammer) It pulled the code for the oil cooler, so I took it for a drive the EOT never went above 205 and the ECT was about 183-185 TOPS so I got to wondering could it be the thermostat, is it stuck open?

these trucks should run right around 190deg,helps mileage too, but if you are seeing a 20deg spread it is time for a oil cooler rebuild and most importantly add a coolant filter so the oil cooler doesn't clog again. It is a perfect time to add a EGR delete since you are going to have the intake off.

You could try a coolant flush and new thermostat. But I will tell you from experience at best it will probably buy you a few weeks to a month depending on how much you drive it. Or you could go full bulletproof right now and upgrade all the known failure points. My suggestion if you don't tow with it everyday and can watch the temps for a month or so is get a coolant filter, flush the whole system , put in new thermostat, then put the coolant filter on and drive it for about a month watching temps to make sure you don't tear anything up and monitoring coolant level religiously to make sure the egr cooler doesn't bust. After that month is up tear it down and do egr delete and oil cooler rebuild. Change the coolant, fuel, oil filters and add a good elc coolant and synthetic oil. And drive it.
