Default Maintenance light on trucked died while driving

So about 5 times now my 05 f350 has had maintenance light come on while driving down the road and my truck just dies when it comes on. when I mean the truck dies it still is running and I can still control the truck but I have no throttle response in the truck. I pull over shut off truck and restart it and it will drive fine. What are the causes of the maintenance light even being on that would have this happen. where should I start. I do have an sct livewire ts tuner with custom tunes but when I go to read codes nothing comes up.

I do have an egr delete in the truck now would it be somehow sensing that delete and going off. but I do have a custom tune that should have go rid of that code permenantly.

In some ecu's i've seen, there is a setting for the maintnance light so when the ecu thinks the truck needs serviced it will throw a maintnance light. And it sounds like it's putting your truck into a limp mode.
But thats my guess,and thoughts.

You may have a apps problem. Most fords with throttle by wire will set a maint. req. light if it has a fault and go into limp mode. Check codes.
