Default pyrometer

Has anyone had a pyrometer gauge or probe go bad on them? The person that i bought this truck off of a year or so ago had it hooked up backwards and the gauge didnt work at all. I hooked it up correctly im assuming because now it will read temps but they are a lot higher than I would think for the truck still having the stock fuel settings. These readings are also causing concerns of me turning up the fuel on this truck.

driving at 55 to 60 on flat roads on cruise control temps run appx 700 to 800...
towing even an empty trailer temps run 900 to 1000 on flat and have to watch hills due to the pyro going too high. I have even had to pull off the side with four ways on too let egts drop. This truck also has never had the fuel turned up. The only thing I have done is new injectors all the same code and pop tested myself to make sure they were good all around before I put them in.
