If the VP goes out, will a code pop up?

The older trucks (2000 and older) won't show codes - they have to be scanned with a tool to do so unlike the newer ones where you can use the key on off thing.
If the VP dies it can and can not code depending on what caused it to puke.
If you are going to the trouble of getting a new VP spend a bit more $$ and get the blow by bottle relocation kit from Cummins as well. Install that (which you need to have the VP off for) and this will result in no more crap on the front of the block.
VP = $$ but with the right goodies installed they will last for a long time.
My VP went on my truck at 80,000 km and I had that replaced then installed a FASS 150 and then installed a full gauge package. The FP has never dropped below 13 even with the stage 5 sticks i have on board.
