Default Towing problem

Ok so I went to the mountains this weekend to ride horses, and I hooked to my friends gooseneck horse trailer. I think it is a 28 ft trailer. all aluminum with a living quarters on the front. We had three horses that weigh about 1200 pounds each. So we get started out and it seemed to do alright I mean I could tell I was loaded down pretty good, but I didn't run it to hard then about 40 miles down the road and started to speed up, I was wanting to run 75. Well I would gear down and run kinda hard to gain speed and when it finally gear up it would start losing speed. So it would gear back down. It done that for a little ways. Oh yea I would set my cruise. Then it went to gear down and just defueled. The motor stayed at about 1500 rpms but never shut completely off. I pulled over cut it off and unhooked my edge j/a. It still done the same thing about 50 miles later. If I would let it stay in 5th gear it wouldn't shut off but was pretty weak. If I was creeping up a hill it would slow down enough to where it geared down on it's own but wouldn't cut off then. But if I was running over 60 or so, it would defuel if i hit the fuel to gear down. Well I finally got there (250 miles later) I went to town got a fuel filters and changed it. On the way home it done the same thing. Any idea what it is?

In 5th anywhere from 7 to 15 or so. When it kicked down in gear 20 to 27. Egt's were around 800 to 900 running kinda easy. When it pulled uphill they were over 1000. But when it pulled uphill in 5th it would lose boost. And I kept it in 5th so it wouldn't gear down and defuel.
