Car audio pros run their installation up to 17V.

They run the audio system on 17 or 18v, not the whole vehicle system. There can be damage to stock electronics running more than 15 volts on some items. I would be leary of doing it for extended periods. Brief moments like in dbDrag, sure...but not continuous.

What about voltage limiters as protective devices in front of sensitive equipment?

which ones are the sensitive ones? i know the DIC, ECM, TCM, and BCM have voltage regulators but i don't know how high they can go

up to 150W depending on the unit behind. Do not forget the ABS or Airbag units!
It might be better to decrease the overall voltage.

i gutted my old batteries so i can use them as a case for my capacitors. i left one cell compartment intact so i can use it for balancing circuits, etc
