Default coolant system

So i was going on an 8 hr drive yesterday "driveing down the highway at 70 mph" and i got about 2 hrs from where i was going and i noticed that my coolant temp on my black maxx would drop down to 195 then shoot right back up to 200 almost as fast as you would say 195,196,197,198,199,200 then go back down to 195, its not overheating and everything else runs good but the thing is my truck use to run around 197 going down the highway. going in town tho everything appers to be normal but has this happend to anyone else?
