Default Converter question

I see a lot of converters offered in low stall as an option,, and some offered in high stall versions. What are the pros and cons of having a lower stall rating? My truck is mainly a driver, but i do pull 10k loads up some steep grades. Any advise or personal experiences with the subject are gladly welcome.

lower stall seems to be better for towing and dd a higher stall is better for racing and taking some torque off the launch so you have less broken parts

i run a 300 lower stall in my tow rig and a 500 higher stall in our race truck
