IIRC the thicker gasket is to offset any material removed from the head or the block to true it back flat.
IF no material was removed and you put a thicker gasket on it would lower the compression ratio a little bit, it would also alter the valve train geometry a little bit BUT would allow for more piston to valve clearance.
IF material was removed you want the thicker gasket so that the valve train geometry would be correct, the piston to valve clearance would be proper and the compression ratio would be "stock".
