all depends what you want.....myself I like to do a 100 plate which basically keeps the stock profile for the first couple hundred RPM then allows for no fuel restriction for the rest of the power band, a 100 plate is best for the drive train as IMHO the takeoff is where it all gets tore up from the hard starts

100 seems to be the way to go. I pulled mine. Not much clutch slipping, but when i installed 215 sticks i toasted the clutch.
Fill out your sig on your mods, it will give us a better idea of what your working with. If your going that aggressive, you need to know your EGTs. Start saving for a southbend before you do anything.
To answer your original question, the best method to grind the plate from what I've seen is with a die grinder. Make the profile you want from that 2nd pic, then damn near polish it. Its not the end of the world, but theres a pin that slides up the plate and if it catches it can give you problems.
