Default Fuel plate for 97 cummins

I have a 97 cummins with a turbo back 4inch straight pipe. it is a work truck that pulls at the most 19k IBS. i dont kno what fuel plate to add or just to take it out. I like my trucks to blow smoke and have LOTS of power but still get good MPG and still be reliable and not break. Please let me kno what to do.

You need gauges, at the least EGT, BEFORE making any fuel changes. You can easily melt the pistons and/or turbo. That wouldn't be reliable!
Smoke is unused/wasted fuel. Think of it as mileage going out the pipe.

How important are the gauges? If i ran without them for a few months and got an aftermarket fuel plate would it mess n e thing up for a few months?

Gauges should be the first thing you put in imo. Egt, boost and trans temp if you run a auto.
