Default IC surface temp?

I'm getting ready to finally throw the IC on my truck pretty soon, and I'm considering a couple of mounting options. Does anyone run a temp gauge on the surface of the IC? Either way it will be in front of electric fans, and I'd rather the fans kick on before it gets totally heat soaked. If i run IAT I'll have to take amount of boost into consideration. I just want to make sure the IC physically doesn't really hot.
They are good electric fans, they won't have a problem keeping up with the heat. Right now I can pull a grade with them off, temp starts going up, and almost flatline the gauge if I leave them on.
