Your not underfueling your over fueling either because your timing is jacked up.. Or your got your injection pump settings all out of wack. All that black smoke is unburnt fuel and unburnt fuel creates alot of heat, and actually properly burned fuel will run cooler than unburnt fuel. Who did your timing and how did they do it? did they use a dial indicator on the fuel injection pump or did they just "wing it" you can try sliding your fuel plate forward and see what happens, but what ever the case its getting to much fuel and not enough air.

So much bad info in this thread it's hard to read
It is possible to hit 1800 with a 215 pump and stock injectors. Not recommended. It is also possible to hit 1800 many times with out hurting the motor if you get up there and back right back off. I have hit 2200 many many many times before and not a single problem. Don't recommend that either.
When you add timing it can cause egts to rise higher if you don't have the air to push it.
A properly tuned pump/afc can make or break a truck. You can have all the fuel and air in the world and not ever light the turbo correctly. And make a lot less hp by not having the afc set up correctly.

getting kinda off point but hot air is still air. 55psi on the same truck will unarguably make more power than 35psi. in the EXACT SAME SET-UP. its not efficient but its still slamming what it can into the engine.
and of course you can see 1800* on stock stuff. but to see such numbers you are beating the HELL out of it in extreme situations.
they way the original concern was worded 1200* cruising on near stock stuff with 1800* with pedal down passing (not racing or pulling). this is way out of wack, by several hundred degrees. i still SERIOUSLY doubt this gauge. do you have a buddy you can borrow a gauge from?
as mentioned above a properly tuned AFC will make the truck run so much better but -in my opinion- will not cause these heat #'s on such a low HP truck unless you climbing Everest with the world behind you to the floor.

Can I say something here boys? Black smoke especially on the topend is unburnt fuel so unburnt fuel, high egt's and since the timing is bumped should lower your EGT's not make em rise so I'm gonna go out on a very short limb here n say get the WHOLE intake system from the airfilter to the intake horn pressure tested, I'm will to bet there's a leak somewhere. Cuz my 93 1st gen with a 180 horse p-pump, 35 psi fuel pressure, no plate, maxed n modded AFC, HX35 n exhaust n intake would hit 35 psi boost with the tiny 1st gen ic and I never saw 1400 on the pyro, my dads 96 5 speed with a worked pump, intake exhaust, afc mods, fuel plate can't get over 1400, now my 94 175 horse ppump with a 100 plate, plugged wg, afc modded slid n tuned with intake n exhaust I have NEVER seen 1200 even on a loooong climb in the floor and 40 lds boost.
Check over your air system, get a spray bottle with soaky water with it idlding n spray your whole intercooler, all the tube connectors, turbo and intake horn n intake plate, if you see a leak you theres your problem, also a very badly plugged air filter will do it too.
