Default Excursion losing horsepower

Hi guys! Newbie here so be gentle with me! I am in LOVE with diesels - own a 2001 X w/ 7.3 and a 2006 Ram 2500 w/ Cummins 5.9 - but my beloved 7.3 is REALLY sluggish nowadays.... this summer it pulled a BIG wakeboard boat all over creation and I wouldn't even hook up now. When I first got the Ram I couldn't really tell which motor was better, but now there is no comparison - wtf? (They both have 115,000 miles on 'em)
The X has an Edge ezf100 in it, do they go bad? Could I tell by unplugging it? Any of the better tuners/programmers/code readers out there tell me anything? Can I stack one of the hot new ones that plug into the OBDII w/o doing anything else and pick up HP that way? I've done all the basics like fuel, oil, & air filters, etc., just wondering where to look next....

Ditch that edge crap and get custom tunes (tw; tony wildman). I'm not sure that will solve your issue.. but edge is crap. And I'm assuming your X is auto right? TW will do work on your trans shifting.

So I don't stack a new tuner in there, I unplug the Edge and take it out? It is an older unit (2004, I think) The X isn't setting any dtc's (yet), but do any of these chips/programmers/etc tell ya anything about horsepower, fuel pressure, injectors, etc? I'm obviously not a diesel mechanic, but I have rebuilt old British sportscars in my past so I might remember which end of the wrench to use if any of you have any pointers for me. A diesel that seems to be slowly losing it's punch - where is the best place(s) to look first?

NO stacking tuners is a BAD idea and counter-productive on these motors. What do you mean do any chips tell you anything about hp?

I know that chips/tuners/programmers (I never really know what to call 'em) display a wealth of info incl dtc's, and some hook up to your laptop and give you real-time dispays of engine performance, I was just wondering if any give you info like injector pressure, fuel pressure, etc...... I guess only a dyno gives you hp, eh?

No, 95% of tuners do NOT display a wealth of ANYTHING. Some garbage Bully Dog stuff or Banks stuff may have built in displays (for an extra 500$ on top of the price of the tuner), such as egt, boost, coolant temp, oil temp etc... but those tuners are garbage.

If you want to know fuel pressure, you buy a fuel pressure gauge. If you want to know oil temp, you buy an oil temp gauge. If you want to know egt's, you buy an egt (pyro) gauge. And so on and so forth.
