Ok, I did some research on this.
The H&S stuff is adjust on the fly, which most of you know is BAD for a 6.0, since the trans is completely incapable of on the fly adjustments, it needs to be programmed.
Mike @ KEM will write custom tunes for the H&S for your 6.0, HOWEVER, you lose the adjust on the fly, for the reasons pertaining to the trans not being able to take adjustments on the fly.
H&S canned tunes like you're running, just suggest a trans re-learn for their tuning, they do NOT actually "tune" the trans like the SCT does. The custom tunes do, but again you lose the adjust on the fly.
H&S costs a LOT more than an SCT, and the ONLY person writing tunes for the H&S will be Mike @ KEM. With the SCT you have TONS of options for custom tunes...
I think that about covers it.
I would strongly suggest you get custom tunes ASAP for that thing.

Bully dog triple dog with outlook on the fly had my truck completely farted up! Was cool for awhile when I bought it but then It never ran right. Trans had no clue what was going on and eventually would not shift during hard accel from third to fourth without letting out of the pedal. Switched to SCT and all is perfect now. My vote...SCT. To each there own though.

You might just as well change on the fly the way you're doing it now, it makes no difference. The trans will always "adapt" and learn your driving habits, whether you pull over to switch or not. In order to actually tune the trans, the truck needs to be shut off and reprogrammed). Stopping or still rolling down the road, really makes no difference in your case.

Bullydog says the same thing. They're just having you force learn the trans real quick, but in the end it really makes no difference because it's still going to shift all whacky. At least the bullydog always did in my buddies truck. The trans will act like it has no idea what it wants to do.
