I just installed my egt gauge. This weekend it I'd a 1500* F gauge and I thought that was enough becoist I've heard that anything over 1200*F is damaging. But whin I floor the skinny peddle it will max out my gauge but I soon as I let off it goes back down to ~700*f Should I be trying to keep it below 1200 at all times or should I be worried More about an average temp over 1200?

Depends on alot of things...
Example...
Your cruising around flat footed with the EGT's around 600* or so. Go to pass someone or play and you go above 1250* for 30 seconds or more... No harm... Because it takes a while for the temps to "heat soak" into the pistons, and you have piston cooling jets spraying them with oil...
Again, another example...
Your pulling a trailer for the last 10 hours at 1000* EGT, go to make a pass and go over the 1250* red line for that same 30 seconds...
You might hurt something, might not... at that point its all about your risk factor. How much you are willing to risk.

Think about putting your hand in an oven that's warmed up to 450. If you put it in for a sec it wont get burnt, but if you hold it in there....
10-15 seconds seems pretty long to me.
I've buried my 1600 degree gauge a couple of times... Just doing some hard pulls up to higher speeds, but I certainly don't hold it there long.
Running a 1/4 mile on a tuned truck should be less than 15 seconds anyways, and you're not going to be at 1500 degrees leaving the line, so realistically it's not getting all that heat the whole time.
