Aftermarket gasket or ford replacement? My '03 is being worked on right now?

Ford's gaskets are really good, its just the whole "not machining" the heads that sucks. You wont have a good seal with two uneven surfaces.

Machining the heads is a must, in many cased having the heads rebuilt it needed. We send a lot of heads out and it amazes me how many turn out to have cracks. We average about 10 head jobs a month, Barry the head tech and the owner Satya, can do the head jobs in their sleep.... the only come backs have beer in their hand LOL

i have to ask, is a re-torque required once the truck goes through a heat cycle like i hear the cummins guys doing?

Not required, but it wouldn't hurt. A lot of it depends on what you're doing with the truck. A guy who is just using his truck to haul an equipment trailer no way, but if you're running a 1000hp race truck, they might need retorquing quite often.
