The oil temp will always be the hotter of th 2 once it is warmed up, the cooler uses engine coolant to cool the oil, without the oil cooler oil temps could get to 250+deg. the magic number is 15 deg. the oil should never get 15 deg. above coolant once it is at operating temps. Make sure you add a coolant filter to your truck to prevent your oil cooler from getting clogged again, because it will without the coolant filter.

i have a coolant filter on it. but shouldnt they be closer, like 2 to 3 different ? not like 10 to 15 i thought 15 was pretty much unsafe ?

To be honest it all depends on weather, road conditions, how you drive, how long you have been driving. Ive had both of mine sit around 180-185 on a 2 hour interstate drive. Hit the city and its EOT 200ish ECT 186ish. Then fluctuate back down to 180. Once your truck gets warmed up keep it running, pop the hood and see if the top of the coolant filter is hot. If it is coolant is still flowing.
