Default New to me 1991 F350

So I just picked up a 1991 Ford F350 with the 7.3. I know very little about this truck and even less about these engines. However I've been a mechanic all my life so I'm confident tearing into things.

What I know about the truck:
It's got 201k miles. The brakes need to be bleed, bad. I drove it home tonight from a jug in the bed. The guy had a holley electric pump hooked up. He said the factory fuel system was sucking in air. It seemed to run fine, ride was smooth and not choppy. Engine and trans seemed to do everything they were supposed to. The ignition switch needs to be fixed. Half the gauges don't work. Power steering as well as oil leaks. I wanted a project and was going to pass on it but it was cheap cheap cheap.

Info needed:
Any basic do's and don'ts for these trucks. Helpful tips or things that should be done right off the bat. Any feedback is appreciated.
