Even if you go with a 3208 I would find a bigger trans for it. I think you will have some firewall mods due to the head width being so big on the cat v-8's. Any reason why you want a V-8 Cat?

3208 should fit into it.......its a typical big chevy grain truck......actually if you look around you may find one with a 8.2 detroit fuel pincher or a big block 366 and a 4 speed....... |

A 366 isn't as wide as a 3208, a 3208 is still wider then the driptroit. And, if it is a typical chevy grain truck, which front clip does it have? Because the non tilt one will be fun working on it and most of the driptroit equipped trucks had a little more recess on the firewall than the BBC gasser trucks.
