Default need advice/help 6.5 t.d.

hi everyone i hav a 98 k2500 6.5 turbo diesel that i bought 10 years ago with 35,000 miles it now has 210,000 very well taken care of miles.a month ago i noticed for the second time the coolant was low (light came on) itook it to a local proffesional mechanic. he called and said head gasket and/or cracked head along with power steering pump leak ,vacuum pump leaking oil,oil pan leaking and rear main leaking and he would like to pull the motor for this. that he would charge 16.9 hours. and the heads would hav to be sent out for service and that would be a couple hundred and he wasnt sure on how long the head shop would be.I said forget sending them out i found new ones that i purchased from clearwater cylinder head and brought to his shop. I also asked for and got new glow plugs, oil pump, glow plug relay was found to be bad and replaced along with starter and pcv canister various hoses and connecters all gaskets and new head bolts. this cost atotal of $3180 W/ my head purchase. I was alright with that got truck back it was leaking oil and went low on coolant much to my surprise. I took it back, he called up and said timing cover leaking and coolant going in crank case and leaking oil that he would put new gasket set water pumpand balancer. 5 hr labor cost $550. got truck back oil leak was fixed but after 40 miles low on coolant. took truck back and am waiting for him to look at. PLease help with any advice i spent alot of $$ and stiil hav original problem and i cannot afford to keep chasing his miss diaganosis.and should i have to pay for all this miss diagnosis? also the coolant resevoir is gurgling when i turn it off
