Default 93 6.5 temp fluctuation

So I flushed and cleaned out my 93's radiator and coolant system. I put a new thermostat in, it also has a rebuilt injector pump. Ok so what im trying to figure out is why the truck gauge is reading its over heating but I pop the hood and the hoses aren't swollen and I can touch them with out burning my hands. When im driving down the road the temp gauge reads it fluctuating between 185 and 211 with no load on the truck? Any suggestions or help would be greatly appreciated. thanks

Ok so I didn't put an AC Delco stat in so I ordered one from my local chevy dealer and I'm going to give that a try then if that doesn't I'm going to look at the sensor. Hopefully the stat solves my problem I appreciate the help from you guys

The oil pressure switch powers the LP when the engine runs and is a common failure item.
AC Delco ONLY for OPS and google OPS relay mod and install for long term durability.
