Catalytic Converter theft...now what

I had my catalytic converter stole in Atlanta last Friday night. Insurance has $500 deductable, 2008 Dodge 2500, Cummins 6.7 stock with 20k (twenty thousand miles) on the clock. Looking for options. drove from Augusta to Atlanta and got 14.5 MPG. Drove from Atlanta to Augusta minus the cat and got 21MPG.
If I don't replace the cat, I void the warranty.
If I delete the smog crap and clear the codes, I get 21 MPG, and get to drive a diesel again. this 6.7 is a pig compared to my 5.9.
What can happen to the engine without the smog crap? Any suggestions?
Need to do something fast, the turbo is howling like a jet plane.

I guess what I am trying to decide is replace the cat and go back to a sluggish low MPG truck, or throw the warranty away and do the delete.
The dealer has already replaced my turbo once. with the straight pipe, I have a better drive than before.
Bottom line, can the aftermarket delete damage my engine?

I say new flo pro 5" and forget about the warranty if you are putting any amount of miles on,the price of fuel now it will make up for the few parts they are actually going to replace

thanks, I ordered a HS xt pro and a downtube and a dpf delete tube. BTW Dodge Dealer estimate to bring it back to stock was $5000...the deduct was $500, delete parts under $1000...never going back to the dealer, priceless.
