Default Rims & Tires

I'm getting a new set of rims and tires for my 97 2500 4wd but before I do, I have a few questions... I don't want to lift my truck (not even a leveling kit). Right now I'm running 285/65R16 Toyo Open Country ATs and I don't want to go to a smaller tire...

I'm looking at getting the RBP 94R rims in 18" or even 20". What kind of backspacing/offset do I need to make these fit without a leveling kit. I'm alright with them sticking of the wheel wells a little but I don't want them to stick out like a mo fo. Also, I'm going to be running Toyo Proxies with these rims, since its a "low profile" tire, think I could maybe go a little bigger than a 285 with the new rims?
