mad Lose power when under load/headwind

Dodge 2007 3500 4x4, delete system removed--Smarty Jr & a brand new motor (last one overheated due to fan wire somehow being cut without my knowledge--after several small trial & error repairs--figured the block was warped) Anyway--Was hoping that was what was causing my loss of power whenever I would hit some hills (with or without a trailer) & in a major headwind when pulling my 26' tool trailer on straight-away.
No such luck! It's doing it again. No trailer--hill--had to drop back to 5th gear & was lucky to get 60mph out of it.
Now what??

do you have gauges and if so whats your boost, egt etc at when this happens?

Don't have any gauges other than stock gauges.

Only seems to happen when it's under a high demand--
Failed to mention that it's only when passing another vehicle on a hill...not just normal driving on a hill.

hmm.....does it feel like it plateau's or actually goes down in speed, rpms and stuff?

Actually goes down in speed for a bit--then kick back up again.

Wound up just replacing the motor!
