Turning the barrels

Turning the barrels
I've been wanting to get my pump benched, but I've had some pretty bad shipping experiences lately, so I don't want to ship it anywhere. After some research, I found a performance diesel shop about an hour away that said that they can do it. But before pulling the pump, I went by to interview the tech, just to make sure that it sounded like he knew what he was doing.
We talked for a while about the mods that I've already done and what my expectations are, and he pretty much said that it sounded like I'd already done everything that he would, and that I likely would not see any gain froming benching it.
After that I asked him about turning the barrels a little to max it out. He said that if he turns the barrels, that the truck would be too touchy to drive on the street. Even with the track being less than 2 mile from my house, he said that he wouldn't even chance that far.
I'd be the first to admit that I'm no expert on the P-pump, but I was thinking that part of balancing the pump is turning the barrels to adjust the flow. Am I wrong about this? I know that if you mess with the barrels, it has to be done on a bench to prevent a runaway engine. But I thought that you could turn them some and still keep it streetable.
The tech said that if I really wanted to, he could turn them and scribe a reference mark. That way I could drive to the track, turn the barrels for racing, then turn them back for the ride home. That sounds like an accident waiting to happen to me. What do you guys think?
