Default Fuel Gauge

Is there a way to hook up a Fuel Pressure gauge to the injection pump to see what it is putting out? Does someone sell a gauge for it?

I think you're looking for a fuel rail pressure guage and they do make em.

most go in the banjo fitting after the filter

Im looking for something after the pump. Like a fuel rail pressure gauge but for a VE pump.

Well i would like to see what it is doing so next time it fails i'm not stranded in the middle of no where 5 hours from home. It would be nice to be able to see the pressure and establish a baseline so when it starts to go i can notice it ahead of time.

That's not the kind of thing I would want to monitor continuously on a 1st Gen. I mean the first one lasted what, almost a quarter million miles? Commonrails can use that information for other, more useful diagnostic purposes in addition to just an overall "possible" indicator of IP health. Lower than normal case pressure is also not necessarily indicative of a failing IP.
