Default Heat Hand

I noticed the other night on the way home pulling the horse trailer that the heat hand on my truck would slowly ease down to the margin line and then ease back up to about 190?? Headgasket maybe?? any helps appreciated!

But its never done like that before it always just stays a little under 190

But now that i think about it I guess the hand would be jumpin around if it was headgasket instead of just moving up and down slow.
