I was wondering if it was possible to remove the big oem fan and place 2 large fans on the radiator and not have any issues with cooling.

I'm running 2001 intrepid fans in my chummins. Cools fine. I don't really tow, you can rig up Taurus or LS1 camaro fans or some others and will flow as good or better than a mech fan. Or get the flexalite kit which allows you to tow around 11000 lbs

If you want a clean set up the flexalite is the ticket but your tow weight will be limited. Would also suggest upgrading the rad if funds allow. Then you could prob get away with pulling double duty. If your more concerned with cooling, 2 Taurus fans rigged to fit or an ls1 camaro or anything with similar cfm would be my suggestion. Would need near 7-10000 cfm to cool properly for towing over 15000lbs
